Derby Pie

In honor of Pi Day, I present Wolfie’s Derby Pie from La Dolce Vegan.  I’ve been wanting to make this pie for years, and I finally got around to it.  This is the second pie I’ve ever baked with a real crust – as opposed to a graham cracker crust or a Crostata.

After making a Chocolate Pudding Pie for our Oscar party, I wanted to experiment more with Alix’s crust recipe.  This filling was so easy, and holy cannoli, it’s good.  A friend that I brought some to asked me if this was chocolate chip cookie dough pie.  It’s ooey-gooey insanity.

Since I want to work on getting the edge of the crust perfect I’m going to have to figure out what pie to make next.  At some point I’ll definitely make this Derby Pie again, and I think I’ll add some shredded coconut into the mix.

  2. Hi, Diane! I don’t post recipes from cookbooks without permission from the author. I just did a search and wasn’t able to find the recipe online, but there’s a chance it’s out there somewhere… I do really recommend the cookbook as well.

  5. This looks delicious! I will have to look for this book. I have read Sarah Kramer’s original book, How It All Vegan, and the recipes in there are just so practical – everyday food for everyday Vegans. I’m glad she’s getting acclaim from established pros!

  6. Hi, Shannon! I love Sarah’s books. If you don’t have this one, I really recommend it. It might even be worth it for this pie alone!
