Betty Goes Vegan Review Part 3 – Girlfriend’s Mock Chicken Salad
This recipe from Betty Goes Vegan was easy and SO delicious. I loved the bright lemon flavor, and I don’t think I would have thought to use lemon juice in a mock chicken salad. It’s so good! I used to not be a fan of celery in pretty much anything, but it was great in this. For a quick weeknight dinner (if you’ve sauteed the chicken ahead of time – I did it during Pearl’s morning nap), this is awesome.
The only thing I’d change about this is doubling the recipe next time. Both Ryan and I couldn’t stop ourselves from going back for more. I managed to save some for lunch today, and I can’t wait to eat it. I’m not sure if the photo does it justice, but I was so hungry that I couldn’t wait to dig in. Of the recipes I’ve tried so far, this one is definitely my favorite.
