Betty Goes Vegan Review Part 1 – Butterscotch Brownie
I was recently sent a copy of Betty Goes Vegan by Annie Dan & Shannon of the awesome blog, “Meet the Shannons.” I’m a huge fan of the blog, so I was very excited to get this book! If you’re not familiar with the Shannons, they’ve been veganizing Betty Crocker recipes – Annie explains it all better than I’ll be able to. It was always fun to check in and see what recipes they’d been tackling, and I’m so happy that they now have this beautiful book to showcase their hard work.
I’ve only gotten halfway through the recipes so far – not making them, just reading through them. There are five hundred! I’ve been stealing time here and there to browse the pages and make note of all the dishes I want to try, but it’s gonna take a while. I have a couple planned for this week that I’ll be reviewing soon. There are so many amazing recipes in this massive book. I have a feeling there will be many parts to this review.
I was in the mood to bake this weekend, so I skipped ahead and flipped to the dessert section. These Butterscotch Brownies sounded tasty and easy, and most importantly the recipe description referenced one of my favorite shows, Supernatural, so I knew I had to make them.
They were as easy to make as promised, and I loved that everything could be mixed up in a pot after you melt the butter. I’m a BIG butterscotch fan. I miss butterscotch chips like crazy, as inauthentic as they may be. Because of that, I have to admit I was really hoping for some massive butterscotch flavor, but the banana in the recipe comes through pretty strongly, covering much of the butterscotch flavor. It wasn’t bad by any means, just not what I was expecting.
I’m also a fudgy brownie kind of gal, and these are more on the cakey side. If this recipe had been called Banana Butterscotch Bars instead, I think I would have loved it more. That being said, these were still delicious, and I appreciated the technique used to make them. They just weren’t quite what I was expecting, but if you know that going in I think you’ll love them. I can’t wait to try more recipes, and of course, I’ll report back!
