Lemon Asparagus Cream Cheeze

With so much beautiful asparagus at the Farmers’ Market lately, I’ve been trying to find new recipes that feature this tasty veggie. This one looked great and seemed really easy to veganize, and since I love the combo of lemon and asparagus together, I thought I’d give it a try.
This recipe was so easy to make, and it’s really yummy. It has a strong lemon flavor, which I love, and it was delicious slathered on slices of toasted baguette. You could also use this as a sandwich spread, or stir it into hot pasta (which I can’t wait to try!).
I only made a couple of minor changes to the original recipe, obviously using vegan versions of the non-vegan ingredients, and also simplifying the technique. I hope you enjoy it!
