Last year I made an Aphrodisiac Pasta dish for Valentine’s Day, and this year I wanted to make something else that also incorporates foods with aphrodisiac qualities. This would make a great start to your main meal, or a nice light lunch to get you ready for the big night. It’s pretty effortless to throw together, which is always a bonus, especially when you’re cooking on a busy weeknight.
All the foods in this salad (arugula, avocado, almonds and carrots) are considered aphrodisiacs according to this article. Add some olive oil, lemon juice and salt & pepper, and you’ve got yourself an incredibly tasty and simple salad that tastes great any time of year. You can even up the aphrodisiac quotient by adding some garlic and mustard to the dressing.
The amounts below are all approximate, since I didn’t really measure as I went. There’s no hard and fast recipe, because you’ll want to use whatever amounts taste best to you. For example, if you’re an avocado or almond fiend, feel free to use more.
about a pound wild arugula, washed and dried
1 ripe avocado, diced
1 large carrot, shaved into strips
2 tablespoons – 1/4 cup toasted blanched almonds
olive oil and fresh lemon juice to taste
salt and pepper to taste
Toss the arugula into a large bowl, and drizzle in olive oil and lemon juice. Sprinkle with salt and pepper, and toss to coat all the greens. Taste, and adjust seasoning as needed. Add the avocado, carrot strips and almonds. Gently toss with the arugula, and taste again for seasoning.
Notes: To toast the almonds, place them in a single layer on a baking sheet in a 350 degree oven for about 4 minutes or so. Toss them around a bit, and then toast for an additional 4 minutes, or until they start to take on some color and smell fragrant.
