Mint Chocolate Silk

You’ve probably noticed that I’ve been pretty absent from the computer lately.  I’ve been busy playing with my nephews and hanging out with family while we’re back in Chicago.  Ironically, this time of year when so many people are entertaining and cooking up a storm is usually when I take a break from cooking and baking.  And as much as I love doing both, I have to admit that I really enjoy having a reprieve!

One thing I’ve been enjoying in this chilly weather is lots of hot cocoa, and it doesn’t get much easier than just pouring some Mint Chocolate Silk into a cup and heating it up.  It you want to get fancy you can top it with some whipped coconut cream, which tastes pretty amazing with this.  A little bit of Creme de Menthe wouldn’t hurt either!

If mint isn’t your thing, you could also have some plain chocolate Silk with Amaretto or Kahlua for a tasty treat.  And Silk Nog with rum is a classic for a reason. ‘Tis the season for boozy hot beverages!  Now if you’ll excuse me, I have to go watch the rest of Cars with a certain 6-year old.
