Corn & Edamame Sesame Salad

Now for the best part of going to The Hollywood Bowl – the food!  It’s been a while since we’ve entertained or since I’ve cooked real food, so I was excited to try some new recipes.  I looked through Veganomicon because I hadn’t done that in a while, and tried to find some things that would work for our picnic at the Bowl.

This Corn and Edamame-Sesame Salad sounded really good, and it was also easy to make, which was nice since about halfway through cooking yesterday I was over it and ready to be out of the kitchen.  They recommend serving it in radicchio cups, which made for a really nice presentation and also made it easier to eat.  They also suggest adding avocado, which I did after tossing it in a little lime juice.  The recipe also calls for sesame seeds, but I didn’t have any so the salad went sans seeds, and it seemed to not suffer too much.

I really recommend trying this recipe.  It’s so simple and fresh tasting, and you could even add some cherry tomatoes or toss it with udon or soba noodles.  I’ll definitely be trying different variations of this one.
