Fantastic Picnic Submarine


I love a good sandwich, and The Fantastic Picnic Sub is our camping sandwich of choice.  This sandwich is really tasty, and even though it has a lot of veggie meat, even non-vegetarians love it.  I found this recipe somewhere online years ago (I thought on the PETA site, but when I just looked for it I couldn’t find it).  It would be easy to substitute whatever veggies or fake meats you like.  Ryan made this one for us – he’s become a master of the Picnic Sub.  Here’s our version of the recipe.

Fantastic Picnic Submarine

1 loaf unsliced Italian or French bread
4 tablespoons olive oil
1 large or 2 small cloves of garlic, minced
Dijon mustard, to taste
3/4 teaspoons oregano
3/4 teaspoons basil
5 deli slices soy salami (sometimes I use smoked “chicken”)
14-ounce can marinated artichoke hearts, sliced and drained
5 slices deli soy ham slices
2 cups salad greens or romaine
5 deli slices soy turkey
1/2 of a medium red onion, very thinly sliced
1 or 2 small tomatoes, thinly sliced
salt and pepper to taste

Cut bread in half, horizontally.  Hollow out the top and bottom of the bread slices, leaving 1/2-inch shells.  (You can use the center of the bread for bread crumbs and store them in the freezer.)

Mix together the olive oil and minced garlic.  Brush the insides of both halves of bread with olive oil mixture.  Brush the mustard over the olive oil.  Sprinkle the oregano and basil over the top.

Lay 5 slices of salami down the length of the bread halves; then the artichoke hearts; then the ham slices; then the salad greens; then the turkey slices.  Top with tomatoes and onions, and sprinkle salt and pepper to taste.  Top with the other slice of bread and wrap with plastic wrap.

Refrigerate at least one hour before serving.

  2. Hi, Carrie! I’m happy to tell you – I just have to try to remember what I used! My favorite veggie slices are Tofurky. I like all the flavors, and I think those have the best texture. I think I might have also used Yves for the other slices in this one. Honestly, there are so many different flavors going on in this sandwich between the garlic, artichoke and herbs that it’s pretty forgiving if some of the veggie slices aren’t that fantastic. But next time I make this I’ll be sure to keep track of what I used and update this comment.
