Sugar Donut Muffin and the LA Veggie Pride Parade!


I was looking around the Baking Bites website one day and I came across this recipe for Sugar Donut Muffins that looked really yummy and really easy to veganize.  This actually does taste like a delicious cross between a donut and a muffin.  I’ve since made some tweaks to the recipe, but I’ll post the original vegan changes that I made.  They really are so minimal that I’ll admit it seems kind of silly to even do that, but I want people to see how easy it is to take a traditional recipe and make it vegan.

Sugar Donut Muffins

3/4 cups sugar
egg replacer to equal 1 egg [I use EnerG egg replacer]
1 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup vegetable oil
3/4 cups non-dairy milk
1 teaspoon vanilla extract

2 tablespoons non-dairy margarine, melted
1/2 cup sugar, for rolling

Preheat oven to 350F, and lightly grease a muffin tin with cooking spray or vegetable oil.

In a large bowl, beat together sugar, egg replacer, oil, milk and vanilla extract.  In a small bowl, whisk together flour, baking powder, salt and nutmeg.  Pour into wet mixture and stir to combine.

Divide batter evenly into 10 muffin cups, filling each about 3/4 full.

Bake for 15-18 minutes, until a tester inserted into the center comes out clean.  While muffins are baking, melt butter and pour remaining sugar into a small bowl.

When muffins are done, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack.

Makes 10 muffins.

  2. I’ve really enjoyed these muffins. I think they would work great in a muffin pan or with the addition of a jelly filling. I’m going to make them the next time I have overnight guests and need good breakfast options. Thanks so much for veganizing and sharing the recipe.

  3. My pleasure, Kim! So glad you like them. And as for a jelly filling, I actually adapted these into a cupcake recipe where I use a jelly filling. But I imagine it would be just as good in the muffins!
