Rosemary Focaccia

This is the Rosemary Focaccia from “Veganomicon”, by Isa Chandra Moskowitz and Terry Hope Romero.  While this recipe does take some time since you have to let the dough rise twice, it was actually really easy to make.  I used to use a Jamie Oliver focaccia recipe that I’d printed off the internet years ago, and for some reason the finished product was always sort of tough.  In all fairness, it may have been me and not the recipe since my cooking and baking skills have probably improved since then.  This recipe is really fool proof, and another advantage is that you could use whatever toppings you like since the basic dough recipe is so great.
