Simple Lunch Salad

I was shopping at Whole Foods a few weeks ago and I was so excited to see that they were carrying sunergia mediterranean herb soy feta. On it’s own I thought it was just okay, so I ended up using it in this simple salad. It’s romaine, sun dried tomatoes, sliced red onion and a simple vinaigrette (I don’t even remember what I used for this – olive oil, red wine vinegar, salt and pepper?). Within the salad it was pretty good and lent a nice salty and tangy note. We ate the salads out on our little patio and I thought they were looking nice in the sunlight so I asked Ryan to take a picture of them.
